What would be the best and most stable way to use the scp command to copy a lot of files?

Or would it be better to use sftp instead?

ok, but would scp not be faster than sftp or is it the same encryption that is used?

It's the same. The SSH transport protocol is used for all SSH communications, whether it be an interactive shell session, SFTP, SCP, etc.
